Lemon Bruschetta Pasta with Grilled Chicken Paired with: Society

I wanted to give credit because I did not make this recipe, I totally stole it.

This is one of my favorite chicken recipes. No oven baking, perfect for summer and healthy enough.

You can use an outdoor grill or a Foreman grill for the chicken, along with some boiled spaghetti noodles and fresh ingredients.



Recipe:

This is a little more in depth of a recipe but still fairly simple. I just wanted to accurately put measurements and all that because it's super good when it's right.

Ingredients

For the Chicken
  • 3 Chicken Breast

  • 3 tablespoon McCormick Grill Mates Roasted Garlic & Herb Seasoning

  • 1.5 tablespoon Olive Oil

For the Pasta
  • 4.5 tablespoon Olive Oil

  • 3 tablespoon Unsalted Butter (i did salted)

  • 3 cloves Garlic minced (or from jar)

  • 3 cups Diced Roma Tomatoes (4 tomatoes)

  • 1.5 tablespoon Lemon Zest (i think i know what that is)

  • Half Lemon juiced

  • 1.5 tbsp McCormick Grill Mates Roasted Garlic & Herb Seasoning

  • 6 cups Spaghetti or less (almost a whole 16 oz package of any pasta you prefer)

  • 22.5 Basil Leaves (.5 oz package)

Instructions

For the Chicken:
  1. Heat grill

  2. While the grill is pre-heating, in a bowl add chicken breast, Roasted Garlic & Herb Seasoning, and olive oil. Mix well until the chicken has been coated with the seasoning.

  3. Place on the grill and cook for 12 minutes (turning once in between). Using a thermometer, you can check if it's 165 degrees Fahrenheit. Remove chicken from the grill, let it rest for a few minutes, then slice chicken at a diagonal. If you're using a Foreman Grill then you'll want to reduce the time slightly, 4-5 minutes on each side.

For the Pasta:
  1. In a large skillet add olive oil, butter, and garlic to the skillet. Stove on medium-high heat for 1 minute. Then add the diced tomatoes. Reduce heat to medium and sauté for 5 minutes. Add the lemon zest, lemon juice, roasted garlic & herb seasoning and cook for 2 additional minutes.

  2. Toss cooked pasta into the sauce and cook for one additional minute. Before plating, add fresh basil leaves. Mix well, and the pasta should spread between 4 plates. Plate the pasta and then chicken on top.



I cooked an entire 3.5 lb package of chicken breast and made this with one package of spaghetti noodles and had more noodles than I needed. So just adjust your seasoning, meat and noodle ratio according to your own preferences.


There is definitely a strong herb and lemon flavor! if you want to cut back on the lemon zest or basil that's up to you, but I like it.

I know it's still mega hot outside but it makes me feel better thinking about our next fall holiday.
